Its aspect

Fine and bluish crust. Tender paste, white to ivory colour. Light goat smell. Light acidity disappearing when mouthed.

Its maturing

2 à 5 semaines. Lait cru, entier emprésuré. Caillé versé dans des moules en forme de pyramide tronquée, percée de trous sur toute leur surface. Egouttage, démoulage et salage. Séchage sur claies ou paillons.

Its history

Its nick name "Tour Eiffel" comes from its pyramids shape and its square top. This cheese is probably not the easiest one to cut into pieces but is by far one of the most beautiful one on a chees-board. Few amateur knows that its specific shape has several consequences over its maturing period: the weight/surface ratio allows it to breathe efficiently and therefore contributes to its unique taste.

The Pouligny-Saint-Pierre is named from a small town in the Berry area; two other goat cheese come from this same area: Valencay and Levroux. A special care is given to this cheese at the moulding step: the curds should not be broken in order to get the finest grain. Its delicate and dry crust is covered by a superficial grey-bluish mould. Its inside texture is bright-whited
